Regarding "a different server", please see the options screen of the EchoVNC Server (right-click on the tray icon, choose Properties...). You can install another VNC server (eg, Real, Tight, Ultra) that runs "alongside" EchoVNC, and instruct EchoVNC to use that *other* server for actual VNC sessions.
