John: Hello! Yes, you're right: neither the latest EchoVNC nor the latest InstantVNC have support for dual monitors. The best workaround right now (for EchoVNC) is to configure the server side to utilize a different VNC server than the one that's "built into" EchoVNC. That is, use EchoVNC to make the VNC connection, but have a different server actually handle the VNC session.
