Thank you to eveyone who responded so quickly. Yes, I should have looked at the schematic but frankly it didn't occur to me as I was overly preoccupied trying to understand the instruction manual.
I don't want to make a big deal about this but if the instructions simply said to use the two outer holes and leave the middle hole empty, there would be nothing to misinterpret and it would be correct whether the builder was looking at the bottom of the board or the top; whether the builder was choosing to solder the top pads or the bottom.
