Tab directly to the address entry box and fill in the email (that is not in your address book), then shift tab back to the Recipient entry box and fill in the name of the person. This does not change the email address as it has already been filled in. If the name being types is like one in the address book, it may autocomplete, but just use the delete forward key to delete the unneeded portion of the name that is being filled in by the address book. Having done this the email does not change to one already in the address book. Maybe this helps your real situation.
