In case others did not know this trick, I realized I didn't explain it 
fully.  One can go first to the address book and "custom" select multiple 
addresses and then create a new mail to those addresses using Cmd-N, but 
they will all be addressed "TO"  (which can be changed individually once 
the mail is created).  

But, if one first creates the email and then accesses the address book by 
pressing the "search" (magnifying glass) button one can multiple select 
and then choose the addressing type for the group as a whole.
