3 suggestions:

1) Are you sure that after you tested 1 file, that you took a new file 
and actually CHANGED, when selecting change-all ?

2) Check programs like Realplayer for theur setup options.  These 
program's sometimes have an option to always enforce themselves again.
I had a battle with a window some day until I discovered a check-box that 
said "Always Float".  I unchecked that box, and it was 
Gone-with-the-Wind(ow).

3) Do you have Classic running ?  I guess since you are a CE'er.
In classic, the preference panel for file associations still exists.  But 
if you change e.g. the association for an html-file to some othe app; it 
changes back in less than 10 seconds.

So, there is at least something running in our Mac's that gets involved 
quite anxiously and imposes this.
