Thanks for the (direct) replies so far. (I'm on digest so some may
not have reached me yet).
The answer to carrying the highlighted text over to the reply is to
set "Quote the text of the original message" under Preferences ->
Composing -> Responding. AND "Include selected text if any". (If you
don't set the first option, the highlighted text won't be copied over).
As for other email clients such as Giaz Mail, yes, I tried them all
and, for various reasons, couldn't use them. I decided to use Apple
Mail because it does mostly what I want and it's supported by Apple
(obviously) and integrates well with iPhoto, Address Book etc.
With a bit of tweaking, it should be fine. Looks like I may need to
write a couple of AppleScripts.
