 Try Tools > Account Settings > Composition and Addressing > Uncheck
 Compose Messages in HTML

Oh, I did that first thing, and Thunderbird completely ignores the setting. Then again, I'm using 10.3, and it could be that they're not bothering to fix things for 10.3 anymore.
