I am told that Blu-Tak (you know, that non-sticky sticky stuff used to stick up posters etc) works very well over a fairly wide range of temperatures without marking the product. It is also quite a good thermal insulator, which makes sure that the thermocouple sees the test item rather than the air temperature.
