whether or not you caught it on you SA trace would be a function of your sweep
rate relative to the signal, it's possible the interfering signal and the
sweep of the SA never were at the same frequency at the same time.  I would
agree with the zero span approach recommended by Mr. Benner.  It may be useful
to know the bandwidth and adjacent channel rejection of the receiver that is
interfered with, as the interference may not be right on the frequency.   It
is always possible that the signal was below the noise floor, but if it was
big enough to jam your device it probably isn't, this assumes of course a
reasonable antenna factor and cable loss.

a SA was used to look at the band, left in peak hold mode for 5 mins...
nothing showed upon the trace.... This is whats got us puzzled...
