Just tie ground and either TX or Rx from the system to be observed to ground and Rx of the monitoring computer. If you are concerned about isolation, you could use a laptop, if you have one with a serial port. But, this is done all the time, RS-232 is a high-voltage signalling scheme, and very immune to noise.
