You are onto something. But it's not quite that. I don't understand yet. The wrapping options where all default. My signatures are broken if I use mailnews.send_plaintext_flowed true OR false. The only way to get mails through unharmed is to put in manual line breaks. Perhaps thunderbird needs restarting to understand that option.
