And now you say, we should do Edje instead. Use what you like. If you are developing an application that a toolkit is sufficient for, then use a toolkit. If you are developing something with a highly custom interface, then use Edje. There are points in between where you can mix the two fairly easily. I don't know of any good sources for this atm. The Edje or EFL cookbook documents in CVS might cover this somewhat, but looking at existing apps is probably the easiest way to pick it up.
