In Tools->Accounts, open your default account, and in Options, turn off the
default signature (set to "None").

I assume you mean the box that expands the particular field you are pointing
at, such as subject or category or sent date. Why would would want to get
rid of that? Without it, you can't see the full contents of many fields.

It is off by default for me. Perhaps it remembers what it was last set to
when you used it and then quit entourage?

As someone else said...no AppleScript in the SE version. Also, in Word, no

I have not tried this out, but I think it will work.

Under General Preferences, look at the bottom of the Address Book tab (I'm
looking at Entourage v. X, but I think you'll see the same options in
E2001.) There are checkboxes to link every incoming message to the
corresponding contact in your Address Book. (Same for outgoing if you like.)
So, when you get an incoming message, double-click the From field; this
opens the contact record. Now, on the contact record, click and hold the
arrow next to the Links button, and you will see a list that includes
"Messages"; select that and a sub-list comes up showing all the messages
from that contact (and to, if you checked that box).
