(1) - this is a limitation of Carbon, AFAIK - so I think this will be the
same with any carbon application.

(2) - For me it does save as a TextEdit file.  Try this.  Save a message as
text, then in the finder, select the file and do a cmd-I to bring up the
info window.  Pull down the the drop down menu and select "Open with
Application" and then pick TextEdit and click the Change all.  That should
change it.
