OK. Got it figured out by piecing together bits from everyone's responses.
The trick is that the menu branching recommend above does NOT exist until
after the .vcf files has been saved or dragged to the finder. It's a
contextual menu that only belongs to the finder version of the .vcf file,
not to the Entourage attachment.

So, for any other Entourage X users out there, here's the correct sequence:

- as a one-time only drill, drag any .vcf attachment from the Entourage X
message window to the Mac finder

- control+click (or right click) on the .vcf file now sitting on the finder
desktop

- select show info (launches the info dialog window)

- select open with application from pop down menu

- choose Entourage X from pop down menu

- click change all

Once that's done, ever subsequent time you double-click the .vcf icon in the
attachments pane of the Entourage X message window, a new contact record in
Entourage will be launched with the data filled in. You never again have to
save the .vcf attachment to the finder, unless you want to switch back to
the Apple Address Book as being the default .vcf app.

Cool! Except for the fact that Entourage help leaves absolutely all of this
out. Hmmmm... maybe I have inappropriate expectations regarding the word
"help." ;-)

P.S. Just curious, do you dual button Mac users get a different menu from us
control + clickers? When you right + click on the .vcf attachment in the
message window, do you actually get a "show info" menu option as Hannes
described? I really like my Apple optical mouse, but if it's giving me only
half the story, would be willing to switch.
