Here's an idea: since any folder you make as a subfolder of another one
takes the same set of columns as its parent, make your new folder as a
subfolder of the type you like, then drag it in the folder pane on the left
to any location you want. If it is a local (non-IMAP) folder, since you are
in Entourage X (which you kindly omitted to say so I had to figure it out to
answer this) drag it to "On My Computer" if you want it to be a top-level
folder. (If you were in Entourage 2001, you'd drag it to the top Folder List
bar to do the same.)

If it makes it easier, you could even keep a set a folders (or even
subfolders) handy just as "templates" for column arrangements, and name them
appropriately. But you probably don't need to do that: you'll know which
folder has the correct column arrangement without doing that, most likely.
