I have a script I wrote that will display the mail client for any message as well, but an awful lot of people aren't using Entourage to access this list or the newsgroups, so I have no idea what version they are running. I have taken to inserting that request in each message I reply to where the mail client hasn't been stated mainly as an exercise in education and partly because I can do it easily. I wrote a script that I use to insert bioler-plate text into outgoing messages (I use notes to store the text chunks, and the script displays a list of all notes that have a category of 'Stationery' and you can choose one or more to insert).
