Let me guess, one of their attachments comes with an exclamation mark prepended to the file name, and won't open - Right? If so, this is how their mail client is saving the resource fork of the file you just sent (appledouble sends the data & resource forks as two separate files. AppleDouble savvy computers will recombine them at the other end. For JPEG files, all the image info is in the data fork, that's all a windows user needs (or can use).
