It depends way too much on how important certain things are (like working
within a group instead of outside of it), what platform you're willing to
use, etc. if you need outlook functionality (group calendars, all that
stuff) then you either have to use outlook on the PC or outlook 2001 within
the classic environment of OSX, or just use OS9.

Pretty much, yes- the server just has to setup your account for outside
email. If all you will be doing is basic email stuff, you can pretty much
interface with an outlook server with any email client including entourage,
or eudora or outlook express.

You just lose all of the extras (see outlook's page on MS's site for more
info on what those are) that makes using an exchange server worth using in
the first place.  Group calendaring, group tasks, everything. You become an
island instead of part of the office community.
