It's a feature of Entourage and most other emailers, I expect.

In Entourage, you can create a group of email addresses and give that list a
name, say "colleagues".  Entourage assigns your email address to the name of
that list. 

If you now send a message "To: colleagues", the To: line in each message as
received will either show "colleagues <your.email.address>" or the
individual addresses of those folks included in your list.  The choice of
which is used is determined when setting up the group list.  There's a box
you can click labeled: "Don't show email addresses".  If you click that,
then the name of the group, and not the members of the group, are listed in
the To: or Ccc: lines of the messages as received.

If you put "colleagues" or the email addresses for any other names in the
Bcc: line, Entourage will send those individuals a copy of your message that
shows whatever is on the To: line or the Cc: line, but nothing that you
included on the Bcc: line.  That's why messages sent to folks listed on that
line are referred to as "blind carbon copies."
