IMAP is fantastic, and Microsoft Entourage is by far one of the best IMAP clients out there - on any platform.
The one catch about IMAP, is that it really helps to find a Mail Service Provider that will give you a bucket of storage space. This is important since you'll be keeping most of your mail on the server, and you don't want to spend all your time deleting it and stuff. Personally, I use www.mailcan.com because they're fast, reliable, and they give you a bucket of storage space.
