The top field of WHAT, Elizabeth? If you mean in an email message you're writing, no you can't "add" a different address there. That's a popup window that contains the names of your various email _accounts_, as created and set in Tools/Accounts/Mail. You may perhaps give the actual email addresses as names of these accounts - that's OK. The only way to add a new one is to create a new (valid) account. Since you seem to have your own domain, you can probably do that quite easily. But you do have to create the account in Entourage first. Then it will appear as a menu item in the popup of every email message you write and you can select it. There's nothing "sudden" about this. It's always been this way. Naturally Entourage won't let you type any old thing into the From box. It's also possible to set a different Reply-To for an account than the From. You do that in the Additional Headers box of the Options tab of the account. Or are you trying to remove a sender from a message you received? You can't do that - it came from who it came from.
