What you are looking for is "Expression" found at:

<http://www.soundsetcentral.com/software.html>

It lets you edit sound sets or create your own. You'll still need a sound
editor for adjusting the volume of the audio you extract with Expression. Of
course, as Dan said, you could get a hold of the sound set from the previous
version and use it in Entourage 2004.
