I wanted to do the same thing for years. I finally figured out a fairly weird but painless solution. Not perfect, but good enough for email.

Is there a setting so that when I click "reply" and write my response, it automatically defaults to a chosen color font? However, I don't want this to be my default font for my original outgoing emails.
If this reply function can't happen automatically, is there a "Plan B" workaround to save time in this situationAgain F2 here. I’m FAR from a QuicKeys expert, and often can’t set it up to do what I want. I’m sure someone else can figure this in an easier way, but here’s the quick and dirty:
New Shortcut
For Entourage
Hot Key: F2
Add Step: User Actions: Menus: Menu Selection
In the “Menu” field, type “Format”
In the Submenu field, type “Decrease Indent”
ADD another shortcut step to this list (by clicking on the little plus sign)
In Menu Item, type Format
In the Submenu, click the Details button. Select Identify by Position (then choose the position that is the color that you want. This maroon is position 2.
Save and you’re done. Now every time you want to use it, position your cursor between each text that needs responding, hit F2, and the above QuicKeys script will 1. Decrease the Indent one time, and 2. Color the text to whatever color you’ve set it to.
If I knew how to set up QuicKeys better, I’d write the script so that it does TWO indent decreases, just in case the original text is two indents inward. However, as I remember, just adding another Menu:Format and Submenu: Decrease Indent was too much for it, and it stopped midstream.
