The only real alternative is to open the messages into their own window.
3-column-view plaintext looks bad on small screens, great on large screens.
It looks terrible on my 12-inch iBook, wonderful on 17" and higher. 15"
should be fine if you extend the window full-width, I think - don't know
about 14". 

You could Hide Folders pane on a small screen - that's another alternative.
Even on my 12" screen, that looks just fine.

Occasionally you'll notice that plaintext sent from certain email programs
(usually Eudora) soft-wraps like HTML does, but is plaintext. That's because
the email program in question can do 'format=flowed' and the user has chosen
to use it. Very soon Outlook Express Windows will have format=flowed (it's
already in public beta) so you may start to get more of these sometime soon.

Send a Feedback request via Help menu if you'd like Entourage to offer
format=flowed too. The more people request it, the better its chances.
(Entourage can already _read_ format=flowed.)
