If it's truly several minutes, then you have some good options. My favorite
would be to run the utlity "Activity Monitor" from /Applications/Utilities.

When you run it, select "Entourage" from the list of processes, then select
the menu "View->Sample Process". Repeat this step for the process named
"Database Daemon".

Send the resulting text from both samples to me.
