There's a big difference in the way iPhoto and AddressBook store data
(individual files on the filesystem) and the way Entourage stores its data.
The Time Machine developers at WWDC admitted that they *currently* don't
have a solution for large database files. The issue was addressed by a
number of people in the Q&A and the developers know that it is going to be
an issue.
This is going to be another big reason why the "Throw Everything Into
One Database" idea is going to be an increasingly bad one, plus with
the huge backup hassle of "I received one email, now I have to backup
2gb worth of data."
