It wouldn't surprise me if the extra features in your mail server are the reason it works fine for you. Is it the mail server in OS X Server? If so I, I could do a test install of OS X Server and verify that Entourage does what I want it to do.
If anyone else reading this has a suggestion of a good mail server for IMAP + Entourage, please let me know!
