William's suggestion is very good. This has the benefit of not needing as
much setup and/or training. You do lose the signing part of the equation, so
that you can verify the sender and content of the message. PDF has signing
options too, though you will need the full Acrobat to use that.

If you need editable attachments to be sent back and forth, you can use
other forms of encryption, such as disk images or archives.
Password-protected ZIP files would be pretty cross-platform and easy to
implement.
