This was discussed a few weeks ago. I also have zero projects but also
experienced sporadic, random freezes (when downloading mail, or when
composing a message, or when clicking an Entourage folder, or when doing
nothing at all....). The culprit appears to be Entourage auto-checking the
database integrity in the background. Once I turned that off, the random
freezing ceased. Restart Entourage with the option key down, select "Set
Database Preferences", then uncheck "Perform Database Integrity Check in the
Background".  To be safe, you might also create a task that reminds you to
restart with the option key down once a week and run "Verify Database".
