Are you sure you're even going to need to? On my company's Exchange server, I have a number of email addresses all mapped to the same Exchange account. When my company went through a name change, they just gave everyone the new email address and switched it over to be their default. The old email address is still listed as one of my alternate addresses, and still works. In Entourage I switched the email address in my account setup to the new address, since in Entourage (perhaps unlike Outlook) you can send from any of your valid SMTP addresses.
