I suggest the following lenses:

50mm 1.8 (i guess everyone has one of these :-) )

either a Canon 28-135 IS (~$500 new) or Tokina 28-80 2.8(~$500 new) or the
Sigma 28-70 2.8 (have not used this one but a friend has it and likes it), 

i think the longer zooms are the ones that will cost you the most. Maybe you
can get the 28-135 and get a prime that is around 200mm. Or get the 80-200
2.8L (around 700-800 used) or 70-200 4L ($700 new - minus $100 rebate),
along with the TOkina or the IS zoom. You can also pick up either the canon
20-35 around $400 or the Tokina 19-35 around $180. The second version of
this lens (the currently availale one) got good reviews. 

IMHO, the lenses are more important than the camera, for the type of
photography you are talking about. SPot metering is something I miss on Elan
IIbut so far, I missed only few shots because of it (and could be avoided
with more care). COncert photography etc will be much more demanding,
obviously.

BTW, if you are not going to enlarge much, you will benefit from the nice
coatings on the expensive lenses which will give you nice contrast, but you
have to ask yourself if the extra $1000 you spend is worth it. Many people
are perfectly fine with the 24(8?)-105 USM lens plus a 50mm (which you can
use where good sharpness is necessary).
