Dan,
What I think Julian means by the term "bracket
focussing" is when you shift the focus slightly before
and then slightly after your subject area. To
possibly capture some nuances of the scene which you
readly do not recognize through the viewfinder with
the aperture wide open, I suppose.
This is not a technique that I've ever used myself,
but it is actually a programmed feature in the new
Contax N1 (at least from what I can recall from their
magazine ads).
