I use evaluative mode and dial in +1 or +1.5 exposure compensation depending how
bright the overall scene is--more when it's sunny. I really don't expect any
meter to recognize snow as being snow--it's going to assume the dominant area of
the scene has a reflectance of about 18%, not the 80+% of snow, so of course I
must make the compensation myself. The exact amount of compensation varies from
scene to scene--there is no hard-and-fast rule--so experience comes into play .
. . and manual bracketing can be useful.
For unusually dark subjects I add a little minus compensation so the meter
doesn't overexpose the scene.
