It is up to the master unit whether to fire its own flash, not to the
camera. Regardless of which Type A EOS body you use, if the flash has a
setting to enable or disable the master unit's flash, then you can keep
it from firing. If that's not true, I will be genuinely surprised.

On page 21 of the Sigma EF 500 Super manual that I have (which may be an
older printing) there's a section called "Master Flash On/Off Setting"
in the box at the top of the page that is titled "Preparation for
Wireless Flash". It tells you how to keep the master from firing. I
can't imagine it works differently on the Elan 7 than on my EOS 1V or
EOS 3. It works fine on those cameras:  when I turn of master firing,
the EF 500 Super acts like an ST-E2.
