I would take the two zooms (20-40, 28-135) and the flash and probably leave the 
50/1.8 at home. If you're interested in architecture, you'll need the 20mm.
Although, some zooms have bad distortion which spoils most architecture 
shots. 

If I were to choose from MY lens setup, I would choose 20mm, 24 or 28mm, 28-135,
1.4x TC and maybe the 200mm. The primes would be for more serious work 
(architectural shots) The 28-135 would work for all the snaps. I'd also 
bring a flash, which is really helpful to fill in the shadows. The built 
in one is likely not powerful enough in some cases.

One more advice I would like to give is, don't mix the snaps with the serious 
work, if possible. Use the daily trips with the family in the cities to find
out what places/buildings you would like to work on. Take the snaps of your
wife and children etc. Then go there alone later, maybe early the next morning, 
while your family still sleeps. That way both parties are happy. You'll have 
time to take your shots and they won't have to wait for you all the time. 
Besides, there will be less tourists around and the light might be better. 
Same goes even more for landscape shots, but it may be more difficult - if 
not impossible - to arrange for it.

In this case, I would just carry the 28-135 + flash for the daily trip, the primes 
could stay at a (hopefully ;-)) safe place.
