After a lot of trial and error, study, feedback and thought, here is what I've
settled on:
1. Set the camera to Tv.
2. Set the shutter speed to the slowest speed you're comfortable with
handheld. Determine this speed through practice.
3. Turn on the flash, set to bounce if there is a roof above. Roof preferably
white.
4. Shoot.
5. Check photo. If there are white walls, they may cause a flash overexposure.
If overexposed, reduce FEC by 1 stop.

Thats all there is to it.

This works for me 100% at home at any time of the day - morning shots with
ambient window light, night shots with no lights.

If I can't bounce off a wall, I'll try bouncing off something else, even my
outstreched palm (looks funny). 

Theoretically, I don't have control over DoF since I'm not paying attention to
the Av. 
In real life, I discovered that it doesn't make so much of a difference.
