Unfortunately, I think your logic is flawed.

You make it sound as though there are people out there thinking: "Let's see,
I can spend $6000 and get a good digital body with a 16-35 lens or I can
spend $500 and get the same focal length in a P&S." That's just not
realistic.

While a lot of us want those ultra-wides I think for the most part the
general public wants the ultra-long-tele end of the spectrum. Thus the
popularity of the 35-105ish P&Ss and the popularity of the "all in one"
zooms like the 28-200s & 28-300s and the like that you see pumped out by the
third party people at Sigma, Tamron, & Tokina.

And of course, to the original problem, if we did get an S500 with a 16mm
lens it's focal length on the long end would probably be quite short, just
like a "regular" lens, like 16-35, maybe they could push it to 50mm. I'd
like the 16mm end but if it meant only going out to 35mm or 50mm there's no
way I'd get that P&S.

If you really want a wide end with digital, go get a 16-35 or a 17-40 or a
24 or something like that and buy a 1Ds or something like that - not very
compact but it will give you all you (and Canon) need :-)
