I shoot raw.  I'm using CS2 and it makes excellent guesses at the right
settings for me in the browser application.  Occasionally I'll make
small changes to exposure, brightness and shadows so shooting raw just
keeps my options open.  I too shoot with a 1DMKII and shooting weddings
sometimes means shooting in difficult light and bright white dresses and
dark suit issues.  Everyone now and then after a portrait shoot I'll
tweak the settings pretty radically including adding vignetting so raw
is a godsend to me - probably just because I know how to do it that way.
For a typical wedding I'll shoot over 1,000 images and I can process and
go through in about 1 hour.  In the new browser program I can give them
star ratings as well which means I don't need to resave or change their
names.  I don't bother going to jpeg at all until I want to give my
clients the images.
