I figure an extra stop of latitude really pays off.

I use Capture One to make it easy to convert my RAW files.

Gaining back a bit of shadow or highlight detail is important to  me -
sometimes, but I can't always know when that is going to be so I shoot
everything RAW except stuff for my web catalogs.

Capture One really is the key to using RAW. It costs but it's worth it to me. I
only use Photoshop for resizing, maybe a bit of cloning sometimes. I love the
way I can tweak my images in C1 and come out with a full histogram.
