For me, it is mostly jpeg. Sometimes RAW, if I really need the white balance right and if I underexpose intentionally to gain shutter speed.
RAW adds to processing, even if you use very good tools. I have tried Capture One and RSE and the supplied ones, but it takes more time. Period. If I edit jpegs, I save them to PSD, not to JPEG, so loss is minimal. Interestingly though, when shooting JPEG, I shoot at normal mode, not fine. I found no difference. Currently I own D30, before I had 300D. I've tested normal vs. fine jpeg and found no difference (visible on print) so I choose the smaller size. There must be, technically, but for me, it is more than fine. I print in a lab, so I try to do as little post-processing as possible. Usually just a quick levels adjustment and unsharp mask. When I shoot, I mostly shoot set to Custom White Balance. I find that AWB on D30 sometimes does not get the job done, and with custom white balance, I have the control.
