Focal length does not affect depth-of-field only subject magnification
and aperture affect depth of field. If you use the same aperture, and
the subject is the same size using either lens, the depth-of-field will
be the same. The perspective will be different (because the shooting
distance is different).
Remember that the 10D is a 1.6X camera, so the 100mm will behave like a
160mm and the 180mm will behave like a 288mm. Though this will NOT
affect depth-of-field.
