I do (almost) both, the first thing I do after getting the CF card out of
the camera is to copy the images to a stand-alone outboard back-up hard
drive (not RAID), then I burn two separate sets of DVD to be stored in two
separate locations, and only then do I start working or at least inspecting
the files while leaving the CF card as is, I also don't reformat the CF card
until the next time I am out shooting just to give a grace period should I
need any of the images on the CF card for whatever reason.

The original version on the hard drive will never be altered, it will only
serve as a source from which I pull images from to work on and then save to
another directory.

Who said digital is cheap?  :-)

Exactly!  That's why I also agree with "copy" than "move" command just to
ensure the originals on the CF card stay there intact while the backed up
version on the hard drive and even the ones on DVD have been verified to be
successfully created .
