Canon 350D + Battery Grip + EFS 17-85 + Speedlite 580EX
Canon 650 + EF 50mm + Speedlite 420EX
I still don't know if I could go really close to the altar, but I think
that at 85 the 17-85 EFS will do the job...
Any advice for me?

I would keep it simple. With weddings you will not have time to play
with lenses, etc. Keep the setups together as you have shown. I would
use the 350D with a 2GB card and use RAW since you can better use these
files if you are off-exposure a bit. The Speedlite has good light, use a
bracket. With yours I would recommend the Stroboframe Pro T or Camera
FLIP. This will keep the flash up above the lens to avoid shadows. 
If you use the 650 with film, I keep it as a backup or have someone back
you up as a sceondary with the film body to get the important ceremony
shots on film. The film will produce a larger print if you need it
(arguable I am sure) and also provide a safety net in case you mess up
the exposure on any digital shots. You have a large margin with film
small for digital in terms of latitude. Use a 400 film like Portra 400
and set the ISO to 250 manually. This will give you shadow detail and
better latitude since the bride will be in white and the camera will try
to stop down. Set your 350 for ISO250 as well and check your exposures
when shooting the white wedding dress to make sure you are not out of
range. RAW files will save the day if you are underexposed here.
Use NiMH batteries in your flashes and not alkaline. Have a back up set
for each flash.
