M mode for everything. Anything P can do you can do better.
My fill flash use can be to compensate for a backlit subject like a runner
with his back to the sun. I'll set the camera to underexpose the subject by
1/2 to 1 stop and let the flash fill in the subject. The background will be
hot by 1/2 to 1 stop but the subject should be flashed about right.
Or, it might be for putting a little light under a helmet. Set the camera to
ambient and the flash to -1 to -2 stops. My exposure will be right on with a
little extra light under the helmet.
Most of the time I keep my camera set to expose ambient correctly in M mode
and let the flash, if used, add a little extra to the subject.

Just reading the thread about the 17-40 + flash currently running, got
me thinking about fill-in flash, or fill flash as the yanks say.
I have a 1DII and a 580EX and seldom if ever shoot using fill flash. If
I shoot 'normal' flash then I shoot manual, 1/250th at f5.6 or f8 and
let the flash do the rest, and it works great. I did some ad-hoc group
shots (exterior day, cloudy) the other day and took the flash (in case
of bright sunshine) but hadn't thought about it at all (I'm like that
sometimes ;-) and ended up using just shooting ambient as I hated what
the flash was doing in Av.
I've since read this page:
