There is no scientific reason for this behavior, assuming the
crankcase venting system is functioning as designed. Any oil level
from 5 quarts on down is safely outside the engine casing and thus
should be unaffected. The one thing that does change, however, is
the relationship between the oil level and the fill neck. Ergo, the
only explanation I can come up with that makes any sense is a leak at
the filler cap or in the tank itself interfering with the oil drainback.
2.5 quarts is too close to the minimum required for adequate cooling.
(demonstrated to be 2.25 quarts, and Ercoupes are not known for
running cool...) I'd try and keep it at least 3.5 quarts.
Lycomings are a completely different animal.
