The oil temp in my Alon has never been over 190 degrees F since I restored the plane.  This includes during prolonged climbs, etc, and with OAT at ground level as high as 95 degrees F.  I climbed to 12,000 feet the other day.  Temp on the ground was about 90.  At 12,000 feet it was 35 degrees.  Oil temp stayed at or below 180 degrees throughout the climb.  Climb was at 82 MPH.
 
My engine baffling is all in excellent condition, including the baffle seal material.  My oil tank has the factory original baffling around it.  My only problem with oil temperature is that the engine runs too cool in the winter time.  Even with a plate covering the large opening under the spinner, the oil stays way too cool, like 120 degrees. 
 
You have probably checked this already, but does your baffling fit tightly against the nose bowl in front of the engine?  Do you have the little piece of baffling on the left front side of the crankcase that prevents air from getting through there?  Any leakage between the front engine baffles and the nose bowl will dump high pressure air from the top of the engine to the low pressure area under the engine without routing the air through the cylinders.  Also, if your carb air inlet is not a good fit against the nose bowl, you could have ram air from the carb air hole in the cowling pressurizing the area under the engine, which would also hinder the air flow down through the cylinders.
 
Just some ideas - you've probably looked at all this already.
