This is a common complaint with Stromberg carbs.  As you suspect, the issue
centers on the fact that the Stromberg has no accelerator pump.  It should
not stall the engine, however, as long as you don't advance the throttle as
fast as possible.

Chances are the float level is a little low or the idle mixture set too
lean.  A leak in the induction system can also cause this behavior.  I've
even seen carbs with the parting screws loose do this.  

Or, you could be advancing the throttle too quickly.  What is "too quick" is
quite subjective, though.  It should be able to handle idle to full throttle
in about 2 seconds.

The problem is worse in the winter because the air is more dense and the
carburetor correspondingly leaner.
