A CFI only has to have a medical if he is acting as PIC during the flight.
So, if the person undergoing the training can act, for all purposes, as the
PIC (current, current BFR, current medical if one is required, etc.) then
the CFI does not have to have a medical, or be current.

I am a CFII - but am exercising sport pilot and sport instructor privileges
only when I have to be PIC, because I have no medical.

But I routinely instruct in a Bonanza, Archer, and a few others when the
person being trained can act as PIC.  However, I can't put a hood on the
student - to do that, I then become a required crew member (safety pilot)
who has to have a medical.
